My Niece’s 18th Birthday

Last week we celebrated my niece’s 18th birthday.  Some of you know that we have been her legal guardians for the past few years, so she is like one of our children.  We wanted to do something special for her.  God’s blessing upon our lives enabled us to buy her a “set of wheels” ~wink~ and throw a special surprise luncheon event with a few of her close friends.

I planned for her friends to show up at the door together at 11 a.m. Saturday morning.  Boy, was she surprised!  She answered the door in sweats and no makeup and wished I would have prepared her a bit.  ~smile~  Of course, I couldn’t do that.  I would have ruined the surprise!
Once the friends arrived, my daughter and I busily went to work!  We sent the girls upstairs while we set the table with beauty.  (Notice the centerpiece ~wink~!)

We served breaded chicken salad, and I had most of the food prepared in advance. I breaded and fried the chicken breasts the night before.  I made a large mixture of fresh romaine lettuce and carrot peelings in a bowl.  We placed the greens on a plate with a good amount of chicken on top.  The table held other optional toppings:  grape tomatoes, freshly shredded cheese, dried cranberries, and honey sticks, with a choice of all-natural, delectable ranch or creamy italian garlic dressing.  I made a 9 x 13 pan of cornbread that morning and placed that on the table as well.  The girls were delighted and enjoyed the food thoroughly!
